Baked Chicken Skewers
Ingredients:
- 2 pounds (32 oz) boneless, skinless chiken breast
- 3 Tablespoons plain Greek nonfat yogurt
- 1 Tablespoon dried oregano
- 2 cloves garlic (chopped)
- 1 Tablespoon Dijon mustard
- 2 Tablespoons crushed red pepper flakes
- 1 Tablespoon fresh lemon juice
- Salt & pepper to taste
- 10 wooden skewers (TIP: Soak skewers in water for 30 minutes before using to prevent them from burning in the oven.)
Directions:
- Preheat the oven to 400 degrees Fahrenheit.
- Cut chicken breasts into 1-1.5 ounce strips.
- Combine oregano, garlic, mustard, salt, pepper, red pepper flakes, lemon juice and yogurt in a bowl, then marinate chicken in the mixture.
- Put one strip of chicken on each skewer.
- Spray a nonstick pan with cooking spray and place skewers spread out 1/2 inch apart on the pan.
- Bake for 15-20 minutes, turning over halfway, until golden brown.
