Bells for Buns!

Thought I was done making vegetables my “bread?” Nope. Not even close. See those red or green peppers in your food box? Ignore the fact that mine are yellow, and start thinking of them in a whole new way. These babies are the perfect crunch and flavor to any burger/ patty you might be craving. I was craving a salmon burger, so if you are too just find your local Trader Joe’s. If not, this would be perfect with any regular burger, turkey burger, tuna burger, tofu burger…the list goes on and on. I added some mashed up avocado, but feel free to deck it out with all your favorite toppings! And if you’re lucky enough to not be a recent college grad and not have a grill think about firing that thing up and just cooking these “buns” on there right alongside your burger. They hold up nicely so if you’re concerned about that don’t be. I bit into mine like a normal burger, and if you happen to be gluten free like me they honestly hold up better than some of our bread options.

Stove top directions:

  • Heat a pan medium-high heat and spray/ add some oil
  • Cut pepper in half and scoop out seeds, and place on pan
  • Cook each side for about 3-4 minutes, until they begin to get charred and sizzle
  • While they cook to your desired amount cook up your patty of choice
  • Top bottom pepper half with anything and everything: avocado, slaw, bbq sauce, mayo, bacon, ketchup, mustard, lettuce… the possibilities are endless
  • Top with top “bun” and enjoy!
