Feeling a little corny today

Make sure to double or triple this recipe because you’ll want more- just ask my mother, sorry mom. This was the perfect main dish for my lunch on this hot day, and would be a perfect side dish at any dinner- I see a beautiful picnic in this dish’s future. You can make it your own with the pepper you choose, whether it be spicy or sweet. The natural juices of the veggies, or fruits in the tomato’s case, and the sweetness of the corn blend perfectly. Enjoy!

Ingredients:
Servings: 2
2 ears of corn
1 roma tomato
¼ sweet onion, finely diced
chopped cilantro
cracked pepper
1 chopped pepper (I chose an Anaheim pepper, but use a Serrano or chili if you want a spice)
squeeze of lime juice

-Peel off corn husks and cut kernels off the cob
-Chop sweet onion and chosen pepper finely, along with the cilantro
-Dice roma tomato
-Combine all ingredients and season with cracked pepper and lime juice
