Going Bananas for Breakfast

Good morning! I was looking for some way to use my fruit besides in a boring old fruit salad, so I decided to cook it up. By pan frying the banana and grapefruit you can bring out that sweetness, making it a perfect topping for my protein packed yogurt. Bananas are a great source of carbs, so combining the carbs, protein, and a little healthy fat from some nuts to top it off should keep you powered all morning!

Ingredients:

  • 1/2 grapefruit
  • 1/2- 1 full banana
  • 1 Tbsp honey
  • Cinnamon
  • 3/4 cup greek yogurt
  • Granola

-Cut your grapefruit in half and cut around the outside to separate the flesh from the peel
-You should then be able to just peel off the outside, and chop up your inside however small you’d like
-Chop up your banana and place it in a greased pan on medium high heat
– Sprinkle some cinnamon and drizzle your honey on top
-Let the bananas brown a bit (1-2 mins per side) and add in the grapefruit, stirring every so often
-Remove from heat once everything has a little bit of a char
-Top your yogurt!

Other add ons: Granola, chopped up nuts (my favorite are pistachios!), coconut, more cinnamon, your favorite cereal
