Nacho Average Taco

Servings: 2 people
Ingredients:
¼ Red cabbage head
1 sweet onion
Cilantro
1 tbsp oil (I used canola)
2 ears of corn
Salt
Sugar
1 lime
1 chicken breast
taco seasoning

Cabbage slaw
-Cut cabbage in half and then fourths
-Cut out core of one of the fourths and finely slice
-Finely chop ¼ cup of cilantro and finely slice ½ of sweet onion
-Combine cabbage, cilantro, and sweet onion with 1 tbsp of oil and ½ squeezed lime juice

Corn salsa
-Husk corn and place in large pot of boiling, salted water
-Turn off the heat and let cook for 10 minutes
-Remove corn and let cool, then cut off kernels
-Finely chop ¼ cup of cilantro and dice remaining ½ of sweet onion
-Combine corn, cilantro, onion, remaining ½ of squeezed lime juice, ¼ tsp of salt, and 1 tsp of sugar in bowl

Taco chicken
-Cut chicken into small strips and place in medium heat pan with oil
-Brown on one side for 1-2 mins and flip
-Add taco seasoning once cooked through

Build your taco!
Add ons: Cheese, Greek yogurt (awesome substitute for sour cream!), Crushed red pepper flakes for a little kick
