Put a Little Pep[per] in Your Step Today

Being excited for lunch tends to make my day, and boy am I excited. Roasted red peppers are one of my all time favorites, and they’re unbelievably easy to make- way easier than I’m sure you’re imagining. Basically the oven does all the work for you besides a couple twists of the hand, and imagine how impressed dinner guests will be with your roasted pepper and cheese appetizer or your roasted pepper baked chicken or your roasted pepper burgers! The possibilities are endless! For lunch I kept it simple with a sandwich, but don’t stop there, and tag @foodshare_columbia with all of your ideas!

A Peppy Lunch
servings: 1 person (sandwich)

Ingredients:
Bread
1 red pepper
olive oil
goat cheese
romaine lettuce

-preheat oven to 450 degrees
-line a baking sheet with tin foil and drizzle your pepper with olive oil
-Place pepper in for approximately 40 minutes, turning every 10 so each side gets charred
-remove from oven and let cool
-peel off skin and remove stem and seeds
-pat dry and place on bread
-crumble goat cheese on top of pepper and add a piece of romaine lettuce on top
-assemble the best sandwich of all time and enjoy or place on Panini press (George Forman shown) and press that baby to hot, melty perfection
-You can also press it in a pan on the stove by just putting a plate on top and letting the cheese melt and bread char
-PS I stored my roasted pepper overnight and made the sandwich the next day, so you can make these the night before
