FullSizeRenderPeachy-keen Ice Cream

It’s 100 degrees and I have a peach staring at me on my counter. So what do I do? I make some super simple and healthy peach “ice cream.” Really it’s frozen yogurt, but I promise you’ll have no problem skipping the ice cream aisle when you see how easy this is. You can also do it with really any fruit or mixture of fruits! It gets a bit more icy than ice cream is, but once you scrape it a little, let it sit out, and move it around it’s the perfect cold treat. And you’d be hard pressed to find a desert that’s healthier than just fruit and yogurt. Enjoy!

Ingredients:

  • 1 peach
  • 1 cup yogurt
  • 1 tbsp honey
  • chopped mint

Directions:

  • Place all ingredients in a blender/ magic bullet/ ninja and blend
  • Pour into a container or just your now empty yogurt container like I did
  • Freeze for at least 3 or 4 hours or until hard
  • Let sit out for a few minutes and scoop!
