In early April, FoodShare South Carolina launched their very first community cooking class in their new kitchen! Under the direction of Lilly Allen, Community Program Manager (back row, third from left), they are collaborating with Finlay House, a senior residence community in Columbia, on a 3-part series for residents who receive the Fresh Food Box. The classes focus on strategies for safe food storage, cooking for one, cooking with limited equipment and/or in a small space, and managing chronic disease through food choices. The series is being facilitated by Chef Floyd Eugene Jeffcoat (back row, fourth from left), who manages culinary programming for Richland Library.
Danielle Harpen, who took the University of South Carolina School of Medicine Columbia Culinary Medicine elective in the Fall, generously donated her time to assist with the class and was an absolutely essential part of the team. And, the participants loved her!
