Pineapple and Radish Salsa

Ingredients

  • 2 cups diced fresh pineapple
  • 1 cup sliced radishes (from about 6-8 radishes)
  • 3 Tablespoons fresh cilantro, roughly chopped
  • 1 Tablespoon minced jalapeño pepper
  • 1 Tablespoon lime juice
  • 1/4 teaspoon salt
  • 2 green onions (white and light green portions) thinly sliced, optional

Instructions:

  1. Add all the ingredients to a bowl, tossing to combine.
  2. You can serve this salsa immediately. Or cover and refrigerate it for up to 1 day before serving.
