Avocado and Black Bean Taquitos

Ingredients

  • 1/4 cup Oil
  • 1 cup canned black beans (rinsed and drained)
  • 1 avocado
  • 6 small corn tortillas
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • juice of 1/4 lemon

Instructions:

  1. Preheat your oven to 425 degrees F
  2. Mash black beans and avocado in two separate bowls.
  3. Mix the cumin and chili powder into black bean mash.
  4. To soften tortillas, heat them in the microwave for 1 minute then transfer to a plate and cover. You can also spread tortillas out on a baking sheet and bake until hot for two minutes, then transfer to a plate and cover. This makes the tortillas more soft so you can easily roll them into taquitos without them breaking.
  5. Once tortillas are warm, add an inch-wide line of avocado and black beans across the middle of each one then roll tightly.
  6. Heat ¼ cup of oil on medium-high heat, and place taquitos in the pan, folded side down.
  7. Fry for about 45 seconds and then flip over with tongs and fry for an additional 45 seconds. Take the taquitos out of the pan and put them on a paper towel to get rid of extra oil.
  8. Enjoy with your favorite toppings!
