Lemon Blueberry Banana Parfait

Ingredients

  • 2 ripe bananas, sliced
  • 1 cup fresh or frozen blueberries
  • 1–2 teaspoons lemon juice
  • 1 cup vanilla or plain Greek yogurt
  • ¼ cup granola or crushed graham crackers (optional)
  • Lemon zest (optional, for extra flavor)

Instructions:

  1. Slice the bananas into rounds.
  2. Place blueberries in a small bowl and toss with lemon juice. This adds flavor and helps keep the fruit fresh.
  3. If using plain yogurt, you can mix in a small amount of honey or maple syrup if desired.
  4. For extra lemon flavor, stir in a pinch of lemon zest.

Assemble the parfait:

  1. In a cup or bowl, add a layer of yogurt.
  2. Add a layer of banana slices.
  3. Add a layer of lemon-blueberries.
  4. Repeat layers until ingredients are used.
  5. Top with granola or crushed graham crackers on top, if using.
  6. Serve right away or refrigerate for up to 24 hours
