Apple, Lemon, & Blueberry Overnight Oats

Ingredients
- ½ cup Oats
- ½ cup Milk or Yogurt
- ½ Apple, cored and diced
- ¼ cup Blueberries
- Squeeze of lemon juice
- Pinch of cinnamon, optional
Instructions:
- Core and dice the apple into small, bite-sized pieces.
- Combine oats and liquid:
- In a mason jar, bowl, or airtight container, add ½ cup oats and ½ cup milk or yogurt.
- Stir to combine so the oats are fully moistened.
- Stir in the diced apple and blueberries.
- Add 1 teaspoon fresh lemon juice – this keeps the apple from browning and adds a bright, fresh flavor.
- Mix thoroughly
- Refrigerate overnight, cover with a lid or plastic wrap.
- Refrigerate for at least 6–8 hours (or overnight).
- Stir the oats well and serve.
Notes:
- Add ½ teaspoon cinnamon or drizzle honey/maple syrup for extra sweetness.
- Top with extra blueberries, a few apple slices, or a sprinkle of nuts/seeds for crunch.
- You can eat it cold straight from the fridge or warm it in the microwave for 30–45 seconds if you prefer.
