Kale and Sweet Potato Mac & Cheese

Ingredients
- 2 Tablespoon oil
- 2 medium sweet potatoes, cooked and mashed (about 2 cups)
- 1 box of short cut pasta of your choice (elbow, rotini, penne)
- 2 cups kale, chopped and stems removed
- 1 teaspoon paprika
- ¾ teaspoon salt
- 2 cloves of garlic minced, or ½ teaspoon garlic powder
- ½ teaspoon black pepper
- 1 tablespoon italian seasoning
- 3 eggs
- ¼ cup low fat milk
- 1 ¼ cups shredded mozzarella or cheese of your choice
Instructions
- Preheat oven to 375F
- Spray or coat the inside of a casserole dish or baking dish with oil
- Cook pasta with package instructions
- While the pasta is cooking, heat the kale in a pan with paprika, salt, garlic, pepper, and italian seasoning
- Cook for 3 minutes until slightly wilted
- Drain the pasta and let it cool for 5 minutes
- Add pasta, mashed sweet potatoes and kale to a medium bowl and mix together
- In a separate bowl, whisk together eggs, milk and cheese
- Add to the sweet potato mixture
- Mix well and pour into casserole/baking dish
- Bake for 30-35 minutes
- Allow to cool for 10 minutes and serve
Tip
- Try adding some chopped melon like cantaloupe for some more sweetness!
