Spinach Salad

Ingredients

  • 5 cups fresh spinach
  • 2 tangerines , peeled and segmented
  • 1 cup cherry tomatoes, halved
  • 1 English cucumber, diced or thinly sliced
  • 1 large carrot, shredded
  • For the Dressing:
    • 3 Tablespoons oil
    • 1 Tablespoon tangerine or lemon juice
    • 1 teaspoon honey or maple syrup
    • ½ teaspoon Dijon mustard
    • Salt and black pepper to taste

Instructions

  1. Combine spinach, tomato, cucumber, and carrots in a large bowl.
  2. Gently mix in the tangerine segments so they do not break apart.
  3. In a small cup or bowl, mix together the ingredients for your dressing.
  4. Drizzle the dressing over the salad and enjoy!

Options

  1. For some added sweetness, add a small handful of blueberries to this salad!
  2. Add a sprinkle of cheese of your choice and nuts for an extra crunch.
