Apple & Cheddar Pita Pockets

Ingredients

  • 1 (6 ½ inch) pita bread
  • 1 tablespoon brown or yellow mustard
  • 1 medium apple, sliced
  • ¼ cup shredded Cheddar cheese (1 oz.)
  • 1 cup mixed salad greens

Instructions

  1. Cut pita in half and spread the insides with mustard, dividing evenly between the two halves.
  2. Stuff the pita with apple and cheese, dividing evenly.
  3. Carefully add greens to the pita pockets, dividing evenly.

Notes

  • If desired you can toast these pockets in a toaster oven to melt the cheese and crisp up the outside!
