Avo-Nana Oatmeal Bites

Ingredients

  • 2 cups rolled oats
  • 1/2 teaspoon cinnamon
  • 1 medium ripe banana
  • 1/2 ripe Avocado, seeded and peeled
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract or imitation extract
  • 3 Tablespoons mini chocolate chips, optional

Instructions

    • In a small bowl, mix together the oats, cinnamon
    • Peel the banana and avocado.
    • Using a fork, mash the banana and avocado in a separate bowl. Add the peanut butter, maple syrup (or honey), and vanilla extract and mix.
    • Combine the ingredients in both bowls, add chocolate chips if using and mix together.
    • Cover the bowl with plastic wrap and refrigerate for at least an hour
    • Scoop 1 ½ Tablespoons of the mixture and roll into balls. Place in an airtight container and refrigerate. Enjoy!
    • For an extra crunch try adding chopped nuts of your choice to the top of each ball
