Avocado and Black Bean Taquitos
Ingredients
- 1/4 cup Oil
- 1 cup canned black beans (rinsed and drained)
- 1 avocado
- 6 small corn tortillas
- 1 teaspoon chili powder
- 1 teaspoon cumin
- juice of 1/4 lemon
Instructions:
- Preheat your oven to 425 degrees F
- Mash black beans and avocado in two separate bowls.
- Mix the cumin and chili powder into black bean mash.
- To soften tortillas, heat them in the microwave for 1 minute then transfer to a plate and cover. You can also spread tortillas out on a baking sheet and bake until hot for two minutes, then transfer to a plate and cover. This makes the tortillas more soft so you can easily roll them into taquitos without them breaking.
- Once tortillas are warm, add an inch-wide line of avocado and black beans across the middle of each one then roll tightly.
- Heat ¼ cup of oil on medium-high heat, and place taquitos in the pan, folded side down.
- Fry for about 45 seconds and then flip over with tongs and fry for an additional 45 seconds. Take the taquitos out of the pan and put them on a paper towel to get rid of extra oil.
- Enjoy with your favorite toppings!
