Banana Crumble Cake

Ingredients
- For the Cake:
- 3 bananas, mashed
- ½ cup plain Greek yogurt
- ½ cup unsweetened applesauce
- 1 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 1 ¾ cup All-purpose flour
- ½ teaspoon salt
- 1 teaspoon baking soda
- Struessel Topping
- 1¼ cup all-purpose flour
- ½ cup packed light brown sugar
- ¼ cup granulated sugar
- ¼ teaspoon salt
- ½ cup unsalted butter melted and cooled
Instructions:
- Preheat the oven to 325 degrees and grease a 9×5 inch baking pan.
- In a large bowl mix together mashed banana, Greek yogurt, applesauce, and sugar.
- Mix in vanilla and eggs.
- Add flour, salt, baking soda and mix until just combined – DO NOT OVER MIX – just until there are no remaining streaks of flour.
- Pour into the prepared pan.
- To prepare the streusel topping add all ingredients to a bowl and mix together with a spatula or using your hands until crumbly.
- Bake for 25 minutes and spread over the streusel topping.
- Place back in the oven for another 25 minutes, until the top is browned and a toothpick inserted into the center of the bread comes out clean.
- Allow to cool completely before slicing.
- Store in an airtight container at room temperature up to 5 days.
