Bean Broccoli Salad

Ingredients

  • 1 broccoli crown chopped finely
  • 1/2 red onion diced
  • 2 cans of beans of choice (chickpeas & black beans recommended!) rinsed & drained
  • 3 Tablespoons yellow or spicy mustard
  • 2 Tablespoons honey
  • 2 Tablespoons white or apple cider vinegar
  • 1 Tablespoons garlic powder
  • Salt & pepper to taste

Instructions:

  1. Finely chop the broccoli crown and stems into small bite-sized pieces.
  2. Dice the red onion and add to a large mixing bowl with the broccoli.
  3. Drain and rinse the canned beans then add them to the same bowl with the veggies.
  4. In a smaller bowl or cup, mix together mustard, honey, vinegar, garlic powder, salt, and pepper. Pour the dressing over the salad and toss until well coated.
  5. You can serve immediately, or let the salad rest in the fridge for at least 30 minutes to allow the flavours to marinate.
