Bean Broccoli Salad
Ingredients
- 1 broccoli crown chopped finely
- 1/2 red onion diced
- 2 cans of beans of choice (chickpeas & black beans recommended!) rinsed & drained
- 3 Tablespoons yellow or spicy mustard
- 2 Tablespoons honey
- 2 Tablespoons white or apple cider vinegar
- 1 Tablespoons garlic powder
- Salt & pepper to taste
Instructions:
- Finely chop the broccoli crown and stems into small bite-sized pieces.
- Dice the red onion and add to a large mixing bowl with the broccoli.
- Drain and rinse the canned beans then add them to the same bowl with the veggies.
- In a smaller bowl or cup, mix together mustard, honey, vinegar, garlic powder, salt, and pepper. Pour the dressing over the salad and toss until well coated.
- You can serve immediately, or let the salad rest in the fridge for at least 30 minutes to allow the flavours to marinate.
