Beef Stroganoff

This skillet meal uses canned beef and comes together quickly on busy nights.

Ingredients

  • 14.5-ounce can beef
  • 1/2 cup chopped onion, white or yellow; or 1 Tablespoon onion powder (optional)
  • 1/2 cup sliced fresh mushrooms
  • 2 garlic cloves, minced, or 1 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups low-sodium broth (chicken, beef, or vegetable)
  • 6 Tablespoons flour
  • 1 cup plain yogurt or sour cream
  • 4 cups cooked pasta (2 cups uncooked)

Instructions:

  1. In a large pan, heat beef with onions, mushrooms, garlic, salt, and pepper. Remove from the pan.
  2. In the same pan, mix together ½ a cup of broth and flour. Heat, stirring constantly, until thick. Add remaining broth.
  3. Reduce heat to low. Add yogurt or sour cream and stir until combined.
  4. Add meat mixture and heat through.
  5. Serve over hot pasta.
