Beef Stroganoff
This skillet meal uses canned beef and comes together quickly on busy nights.
Ingredients
- 14.5-ounce can beef
- 1/2 cup chopped onion, white or yellow; or 1 Tablespoon onion powder (optional)
- 1/2 cup sliced fresh mushrooms
- 2 garlic cloves, minced, or 1 teaspoon garlic powder
- 1/8 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups low-sodium broth (chicken, beef, or vegetable)
- 6 Tablespoons flour
- 1 cup plain yogurt or sour cream
- 4 cups cooked pasta (2 cups uncooked)
Instructions:
- In a large pan, heat beef with onions, mushrooms, garlic, salt, and pepper. Remove from the pan.
- In the same pan, mix together ½ a cup of broth and flour. Heat, stirring constantly, until thick. Add remaining broth.
- Reduce heat to low. Add yogurt or sour cream and stir until combined.
- Add meat mixture and heat through.
- Serve over hot pasta.
