Beet and Spinach Salad

Ingredients

  • 2 medium beets
  • 2 pears, cored & sliced
  • 1 cup spinach
  • 2 tablespoons chopped red onion (or to taste)
  • 2 tablespoons parmesan cheese (or to taste)

For the Dressing

  • 1 Tablespoon vinegar
  • 1/2 Tablespoon honey
  • 1/4 cup oil
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic minced, or 1/4 teaspoon garlic powder
  • Salt & pepper to taste

Instructions:

  1. Combine the dressing ingredients in a drinking glass, small bowl, or jar. Stir/shake well. Give it a taste and add more honey or vinegar, if needed
  2. Peel the beets and cut off the ends. Grate using a box grater and set aside.
  3. Place the other salad ingredients in a large bowl and mix then gently stir in the beets.
  4. Place the cheese and pears on top.
  5. Stir the dressing well, then mix it with the salad.
  6. Add salt and pepper to taste.
