Beet and Spinach Salad
Ingredients
- 2 medium beets
- 2 pears, cored & sliced
- 1 cup spinach
- 2 tablespoons chopped red onion (or to taste)
- 2 tablespoons parmesan cheese (or to taste)
For the Dressing
- 1 Tablespoon vinegar
- 1/2 Tablespoon honey
- 1/4 cup oil
- 1/2 teaspoon Dijon mustard
- 1 clove garlic minced, or 1/4 teaspoon garlic powder
- Salt & pepper to taste
Instructions:
- Combine the dressing ingredients in a drinking glass, small bowl, or jar. Stir/shake well. Give it a taste and add more honey or vinegar, if needed
- Peel the beets and cut off the ends. Grate using a box grater and set aside.
- Place the other salad ingredients in a large bowl and mix then gently stir in the beets.
- Place the cheese and pears on top.
- Stir the dressing well, then mix it with the salad.
- Add salt and pepper to taste.
