Lemon Blueberry Banana Parfait

Ingredients
- 2 ripe bananas, sliced
- 1 cup fresh or frozen blueberries
- 1–2 teaspoons lemon juice
- 1 cup vanilla or plain Greek yogurt
- ¼ cup granola or crushed graham crackers (optional)
- Lemon zest (optional, for extra flavor)
Instructions:
- Slice the bananas into rounds.
- Place blueberries in a small bowl and toss with lemon juice. This adds flavor and helps keep the fruit fresh.
- If using plain yogurt, you can mix in a small amount of honey or maple syrup if desired.
- For extra lemon flavor, stir in a pinch of lemon zest.
Assemble the parfait:
- In a cup or bowl, add a layer of yogurt.
- Add a layer of banana slices.
- Add a layer of lemon-blueberries.
- Repeat layers until ingredients are used.
- Top with granola or crushed graham crackers on top, if using.
- Serve right away or refrigerate for up to 24 hours
