Smashed Avocado Tomato Toast with Egg
Ingredients:
- 2 slices gluten-free or whole grain toast
- 1 avocado
- 1 wedge lemon
- sea salt to taste
- 2 poached or fried eggs
- 1 tomato sliced
- sea salt
- black pepper
Directions:
- Mash avocado with juice from lemon wedge and sea salt to taste. Spread on top of toast. Top with fried egg and fresh tomato slices. Season with a little salt and fresh ground pepper.
