Spinach Salad

Ingredients
- 5 cups fresh spinach
- 2 tangerines , peeled and segmented
- 1 cup cherry tomatoes, halved
- 1 English cucumber, diced or thinly sliced
- 1 large carrot, shredded
- For the Dressing:
- 3 Tablespoons oil
- 1 Tablespoon tangerine or lemon juice
- 1 teaspoon honey or maple syrup
- ½ teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Combine spinach, tomato, cucumber, and carrots in a large bowl.
- Gently mix in the tangerine segments so they do not break apart.
- In a small cup or bowl, mix together the ingredients for your dressing.
- Drizzle the dressing over the salad and enjoy!
Options
- For some added sweetness, add a small handful of blueberries to this salad!
- Add a sprinkle of cheese of your choice and nuts for an extra crunch.
