Turkey Meat Loaf

Ingredients:

Meat:

  • 1 cup quick-cooking oats
  • 1 medium onion, chopped
  • 1/2 cup shredded carrot
  • 1/2 cup fat-free milk
  • 1/4 cup egg substitute
  • 2 tablespoons ketchup
  • 1 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 2 pounds lean ground turkey

Topping:

  • 1/4 cup ketchup
  • 1/4 cup quick-cooking oats

Directions:

  • Preheat oven to 350°.
  • Combine first eight ingredients.
  • Add turkey; mix lightly but thoroughly.
  • Transfer to a 9×5-in. loaf pan coated with cooking spray.
  • Mix topping ingredients; spread over loaf.
  • Bake until a thermometer reads 165°, 60-65 minutes.
  • Let stand 10 minutes before slicing.
