Turkey Meat Loaf
Ingredients:
Meat:
- 1 cup quick-cooking oats
- 1 medium onion, chopped
- 1/2 cup shredded carrot
- 1/2 cup fat-free milk
- 1/4 cup egg substitute
- 2 tablespoons ketchup
- 1 teaspoon garlic powder
- 1/4 teaspoon pepper
- 2 pounds lean ground turkey
Topping:
- 1/4 cup ketchup
- 1/4 cup quick-cooking oats
Directions:
- Preheat oven to 350°.
- Combine first eight ingredients.
- Add turkey; mix lightly but thoroughly.
- Transfer to a 9×5-in. loaf pan coated with cooking spray.
- Mix topping ingredients; spread over loaf.
- Bake until a thermometer reads 165°, 60-65 minutes.
- Let stand 10 minutes before slicing.
