White Fish and Mango Ceviche

What is Ceviche? (Pronounced suh-vee-shay) As the small pieces of raw fish sit in lemon or lime juice, the juice changes the fish. The acid from the juice cooks the fish and it becomes more firm as it takes in the flavor.

Ingredients

  • 4 tilapia fillets, fresh or frozen
  • 1 cup of lime juice (you want enough to cover the fish completely)
  • 1 cup diced tomatoes
  • 1 large red onion, diced
  • 1 mango, peeled, pitted and diced
  • 2 cucumbers, peeled, seeded and diced
  • 1/2 bunch finely chopped cilantro
  • salt and pepper to taste

Instructions:

  1. Chop the raw tilapia into small pieces, and place in a large bowl. If using frozen tilapia be sure to thaw completely before chopping. Pour in enough lime juice to cover the fish completely.
  2. Mix the tomato, red onion, mango, and cucumber into the bowl. Stir in the cilantro. Season with salt and pepper.
  3. Allow the ceviche to marinate, refrigerated, for at least an hour. Taste for seasoning before serving; add salt and pepper if necessary.
  4. Serve with saltines or tortilla chips and enjoy!
