15 Minute Blueberry Biscuits
What’s better than a perfect blueberry biscuit from a bakery? Well, probably nothing thanks to all the gluten, sugar, butter, and overall fat in them. Instead I present to you a super healthy, easy, gluten free if you need it to be, and pretty dang good recipe? And you already have blueberries in your food box! It’s fate! These literally take 15 minutes and keep incredibly well in or out of the fridge. I like to keep mine in the fridge and toast them when I’m having a craving. I happened to use a baking mix which includes baking soda and powder, but I’ve included the recipe if you don’t have the mix and need to combine them yourself as well. I’ve topped mine with honey and almond butter, but you could do some cane sugar, peanut butter and jelly, bananas, or even make them into a breakfast sandwich with an egg on top for the perfect savory and sweet mix.
Ingredients:
- 2 cups baking mix with baking powder and baking soda already added (gluten free for me)
- OR
- 2 cups regular flour
- 1 tbsp baking powder
- 1/2 tbsp baking soda
- 2 cups greek yogurt (or 1.5 cups regular yogurt because it’s runnier)
- 1/4 cup- 1/2 cup honey (depending on how sweet you want them)
- 3/4 cup of blueberries (or really just however many you have)
Directions:
- Preheat oven to 425
- Measure baking mix (or combine flour, powder, and soda)
- Mix in yogurt until it reaches a dough consistency
- Mix in honey
- Carefully fold in blueberries- I switched from a spoon to my hands because it does get thick
- Flour a cutting board and spread dough to 1/2 inch thick
- Using a floured cup, cut out 1/2 inch thick biscuits and place on a greased pan
- Bake for 14 minutes
- Let cool and dive in!
