What more could you want on a Sunday night after watching football in your pjs with a pumpkin spice candle burning than take-out chinese? Not much until you realize that means a whole lot of gluten hidden in the soy sauce and some extra cash you don’t want to spend. So how do we solve this problem? Spiralizer to the rescue with some super savory zucchini noodles, fresh veggies, and just the perfect amount of salt sans gluten. I swear this could be found at your take-out chinese place, and you’d find a whole lot less heart and artery problems with the minimal amount of salt in this dish. Just another prime example of how versatile these zoodles really are, enjoy!

 

Ingredients:

  • 1 zucchini, spiralized
  • 1 cup chopped carrots (8 baby carrots in my case)
  • 1/4 of an onion, chopped
  • 2 tbsp soy sauce (Tamari if you’re gluten free like me!)
  • 1 egg
  • sesame seeds

Directions:

  • Heat oil in a pan on medium-high heat
  • Cook onions and carrots for 5-6 minutes in oil or until you see a slight char
  • Add zucchini and soy sauce and cook for another 5 minutes
  • Continue cooking until soy sauce is absorbed/ evaporated and noodles are flimsy
  • Remove from pan and put on plate, topping with sesame seeds
  • Fry an egg and place on top
