Baked Chicken Skewers


  • 2 pounds (32 oz) boneless, skinless chiken breast
  • 3 Tablespoons plain Greek nonfat yogurt
  • 1 Tablespoon dried oregano
  • 2 cloves garlic (chopped)
  • 1 Tablespoon Dijon mustard
  • 2 Tablespoons crushed red pepper flakes
  • 1 Tablespoon fresh lemon juice
  • Salt & pepper to taste
  • 10 wooden skewers  (TIP: Soak skewers in water for 30 minutes before using to prevent them from burning in the oven.)


  • Preheat the oven to 400 degrees Fahrenheit.
  • Cut chicken breasts into 1-1.5 ounce strips.
  • Combine oregano, garlic, mustard, salt, pepper, red pepper flakes, lemon juice and yogurt in a bowl, then marinate chicken in the mixture.
  • Put one strip of chicken on each skewer.
  • Spray a nonstick pan with cooking spray and place skewers spread out 1/2 inch apart on the pan.
  • Bake for 15-20 minutes, turning over halfway, until golden brown.
