Fancy a Round of Squash?

I was beginning to feel like I had yellow squash coming out of my ears, so what better way to get rid of it than spiralize it all into a nice beautiful patty, topped with some easy homemade tzatziki sauce. If you read anything read this sauce recipe. You’ll never purchase tzatziki again because it’s so unbelievably easy to make fresh yourself! If you’re thinking “surprise, surprise she’s spiralizing again” then you’d be right! I’m telling you, this gadget is going to be your best friend. Enjoy!

Ingredients:

Fritters:

  • 4 small squash- I used one zucchini and 3 yellow squash
  • 2 small red onions or ½ large one
  • 1 egg
  • sprinkle of bread crumbs (I used gluten free bread crumbs)
  • tablespoon of italian seasoning
  • salt and pepper

Tzatziki sauce:
1 cucumber
½ cup plain greek yogurt
1 clove of garlic, minced
1 teaspoon lemon juice
1 tablespoon chopped fresh herbs: dill or basil preferred
salt and pepper

-Cut your cucumber in half and scoop out the seeds with a spoon
-Finely grate your cucumber and squeeze out the water in paper towels over the sink
-Combine all other ingredients and refrigerate

-Spiralize the squash and onions (I used the smallest noodle blade)
-Combine all ingredients in a large bowl while heating a large fry pan to medium-high heat
– Spoon small pancake sizes onto pan and cook for 2 minutes on each side
-If your batter wont stay together enough to flip add another egg
-Cook all the squash patties and top with tzatziki
