Green (with Envy) Beans

I was so excited about this new box I just couldn’t wait, so tonight I bring you a super easy lemon herb sauce that would probably be good on just about your whole food box, maybe minus the fruits, but hey if you’re into that knock yourself out. Tonight we made quinoa and lentils with salmon, but the star was our beautiful green beans in a lemon herb sauce, so that’s my recipe for you tonight. However, quinoa and lentils are both fantastic sources of protein and vitamins. Lentils, I’ve heard, are also one of the most cost effective product you can buy in the grocery store because you can get a whole bag for practically nothing. Can’t say the same about quinoa, but it’s still super healthy, and really great if you can’t eat a lot of grains or sides like bulgar, farro, or couscous because of gluten. This sauce was great on our oven-cooked salmon, but would also be great on chicken, or any other fish. We put half on the green beans and half on the protein.

Green (with envy) beans

Servings: 3

Ingredients:
Handful of green beans
Olive oil
Pine nuts

Herb sauce:
½ cup olive oil
¾ cup lemon juice
1 clove garlic minced (if you have fresh garlic that’s preferred!)
pinch of salt
squeeze of honey
Chopped mint

-Preheat oven to 450 degrees
-Snap off the ends of the green beans and place in casserole dish or oven safe pan
-Drizzle with olive oil
-Top with pine nuts and cook in oven for 20 mins
-While green beans cook combine all sauce ingredients in a blender/ nutria bullet/ magic bullet and blend until combined
-Pour half of sauce on green beans once done cooking, and pour the other half on whatever your heart desires!
