Guac and Roll

fullsizerenderThere is not much in the world that beats out good guac. However, guac can be expensive (looking at you Chipotle) or seemingly complicated with spices and random things chopped up that you’d never actually buy. So I give you a super simple, healthy, and easy guac recipe to sit on your couch with and watch football or holiday parades.


  • 2 avocados
  • 1 Roma tomato, chopped
  • 1/4 red onion, chopped
  • green pepper/ red pepper/ radishes/ any other veggies you want to add in, chopped
  • 1 tbsp lime juice/ 1/2 lime, squeezed
  • Salt and pepper to taste
  • Roasted sweet potato chips to dip


  • Halve your avocados and scoop out the insides into a bowl
  • Chop/ dice your tomato and onion. You want it to be pretty finely chopped
  • Chop up any other veggies you want to add in- get creative! It’s tough to screw up guac
  • Season with lime juice and salt and pepper to taste
  • Dive in with whatever chips/ crackers/ roasted veggies you can get your hands on!
    • Roasted sweet potato chips: slice 1/4 inch thick rounds, season with salt and pepper and bake for 20 mins at 350 degrees, flipping once.
