Herbed Zucchini
Ingredients
- 2 teaspoons olive oil
- 1 pound zucchini, sliced into medallions or half moons
- 2 teaspoons fresh herb, such as parsley or thyme
- 1/4 teaspoon Kosher salt
- Ground black pepper, to taste
Instructions:
- Heat a large nonstick skillet over medium-high heat and add the oil. Once hot, add the zucchini and cook, stirring occasionally, for about 5 minutes.
- Once zucchini begins to brown, add the remaining ingredients. Cook for an additional 1-2 minutes.
