Lean green wrap machine
Spinach, lettuce, mustard greens, kale, collards…the list goes on and on. What list? The list of past and present food box items that you should be using in place of those expensive store bought wraps. Health benefits + sturdiness + added flavor makes these greens more than just the perfect salad. This wrap pictures collards but take those mustard greens in this week’s box and make them center stage. Nothing gets soggy and you’re adding a whole lot of healthy fiber and nutrients with NO cook time. Can’t beat that. Make it a home run by adding in roasted sweet potatoes to balance out the crunch of the green with a soft, sweet, and healthy inside.
Ingredients:
- 2 leafy greens
- 1/2 sweet potato cut into fry-like slices
- protein of choice- roasted chicken for me
- 2 tbsp hummus or spread of choice- think mustard, bbq sauce, siracha, hot sauce…
Directions:
- Preheat oven to 400
- Slice sweet potato into 1/2 inch thick french fry shapes. This will make the cook time faster and make sure they’re nice and cooked all the way through.
- Season chicken and place on oiled oven pan with sweet potatoes on opposite side.
- Bake for 15 minutes and then flip. Bake for 15 more.
- Spread 1 tbsp of hummus on each green.
- Let sweet potato and chicken cool and then place in middle of green.
- Wrap it up:
- Fold the thicker, bottom end up the green up first over the inside ingredients
- Fold the sides in next
- Top it off with the top flap and wrap it up in plastic wrap. Easy as pie- but instead much much healthier!
