Bet you didn’t know you could cook your romaine. I swear this will forever change how you look at your lettuce. In just 4 mins you have an extremely sophisticated salad with the perfect taste of char, warmth, and health! You can top it with anything you’d like- I see a grilled bacon and blue cheese salad in my near future- but I chose to stick with other box ingredients and went fruity. 0 regrets. To complete the first dinner of the new year- It was Rosh Hashanah, the Jewish new year- I wanted to use apples somehow. It’s a tradition to welcome in the sweet new year with apples and honey. So queue apples and maple syrup. The pork probably wasn’t so kosher, but man oh man that flavor profile with the sweet apples and pork was a winner. These apples would be great with chicken, salmon, or even on their own as a dessert. Enjoy and happy new year to everyone!

Ingredients:

Romaine salad:

  • 2 romaine heads
  • Handful of almonds
  • Halved grapes
  • 1 peeled and wedged orange

Dressing:

  • ¼ cup greek yogurt
  • ¼ cup Dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 2 tbsp olive oil

Apples:

  • 3 apples cut into wedges
  • 1 tbsp butter
  • ¼ cup brown sugar
  • Dash of water

Directions:

Grilled salad:

      • Cut romaine heads in half lengthwise
      • Place on the grill for 2 mins on each side or until charred
      • Top with grapes, oranges, and walnuts
      • Combine all dressing ingredients and drizzle on top

Skillet apples:

    • Add butter and apple wedges into a sauce pan
    • Stir in brown sugar after butter has melted
    • Add a dash of water to make sure it doesn’t lose too much liquid
    • Cook for 15-20 mins or until browned
