Mediterranean Zucchini

With its sunny seasonings of fresh lemon zest, basil, oregano, and red pepper flakes, this recipe pays homage to the humble zucchini and elevates it to a whole new level of deliciousness.


  • 2 zucchini (cut in half lengthwise)
  • 2 teaspoons olive oil
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon crushed red pepper flakes
  • 1/8 teaspoon salt
  • 4 teaspoons grated Parmesan cheese


  1. Preheat the oven to 400°F.
  2. Place the zucchini with the cut side up on a baking sheet. Drizzle the oil over each half.
  3. In a small bowl, stir together the lemon zest, basil, oregano, red pepper flakes, and salt. Sprinkle over the zucchini.
  4. Bake for 20 minutes, or until the zucchini is just tender. Remove from the oven. Immediately sprinkle each with 1 tsp Parmesan. Let stand for 5 minutes before serving.
