Pizza, peppers, and pesto oh my!
Have a pizza craving? You can make the perfect sized personal pizza a whole lot healthier and a whole lot easier by using a wrap. Yep, I said a wrap. What do you think thin crust pizza basically is? A little bit thicker wrap, drowned in oil, and loaded with cheese, salt, and other fats. So ease your craving and feel good too by toasting a wrap to make the perfect, crispy pizza crust. I topped mine with some of the pesto I made the other night from my basil, some spinach, tomatoes, and some quick and easy green peppers. Topped with a little parmesan or whichever cheese floats your boat and voila: pizza!

Ingredients:
- 1 wrap (gluten free for me, but you can get creative with the wraps out there)
- 1 green pepper cut into thin strips
- Handful of spinach
- 1-2 tbsp of pesto
- tomatoes
- grated parmesan cheese
- Meat of choice- I topped it off with chicken to bump up the protein
Directions:
- Place wrap in a pan and broil (approx 350 degrees) in the oven for about 3-4 minutes- keep an eye on this baby. It will go from toasted to burnt in a snap
- While the wrap is broiling add your sliced pepper to a hot pan with some oil
- Cook for 5 minutes, seasoning with salt and pepper
- Add in tomatoes
- Remove wrap
- Smear on pesto, sprinkle your spinach, and top with peppers, tomatoes, optional meat, and grated cheese
- Place back in the oven to broil for about 2 more minutes or until your cheese is melted
