[Slaw]esome First Dinner in Charleston!
Hello from the beautiful and hot as heck Charleston, SC. I just moved down for a new job, and I couldn’t wait to get started on recipes. However, the idea of cooking and eating anything hot in these 100 degree temperatures makes me already start sweating. Instead, I decided to chop up a number of food box ingredients that give a nice crunch, mix them with a super healthy and delicious greek yogurt dressing and have the perfect slaw. For dinner tonight I paired it with a chicken sausage, but I’ve already packed it tomorrow for lunch with some tortillas to make on-the-go wraps! AND I even have more left over. Your typical slaw will be made with mayo, but I personally don’t like mayo and your arteries don’t either, so this recipe is the perfect light side dish for any bbq or picnic. If you don’t believe me test it out for yourself!
Servings: 3, maybe 4. I like to taste as I go
Ingredients:
½ head of cabbage
½ fuji apple
½ cup broccoli florets
½ cup sliced carrots
Sauce:
½ cup greek yogurt
2 tbsp balsamic vinegar
1 tbsp lime juice
1 tbsp fruit jelly of choice
cracked black pepper
Handful of toasted almonds
Directions:
- Chop cabbage, apple, and broccoli and add with carrots to a large bowl
- Combine all sauce ingredients and stir
- If you want it sweeter add more jelly, more tart add more lime juice
- Toast your almonds while stirring the sauce into the vegetables
- Top with almonds and enjoy!
