Spring Coleslaw
Ingredients
- 4 cups shredded red or green cabbage (about half a large head of cabbage)
- 1 cup shredded carrots (about 2 medium carrots)
- 4 radishes, shredded
- 1/4 cup chopped cilantro
- Juice from half a lime
- 1 teaspoon sesame seeds
- 1/4 cup white vinegar
- 3 Tablespoons oil
- 2 teaspoons honey
- Salt & pepper to taste
Instructions:
- In a large bowl combine the cabbage, carrots and radishes.
- In a small mixing bowl whisk together the white vinegar, oil, honey, sesame seeds, and lime juice.
- Pour the dressing over the cabbage and stir until the dressing coats the coleslaw. Sprinkle the cilantro on the salad.
- Serve as a side salad or topping for tacos or sandwiches, like BBQ Pork Sandwiches.
