What’s healthy, easy and red all over?

Guess what. 1 bell pepper has 100% of the daily dose of Vitamin C you need- that’s even more than those oranges you were told to eat growing up! What’s so great about Vitamin C? Well just that it helps protect your cells from the damaging free radicals (like from smoke and pollution) of our everyday lives, promotes healthy skin, and absorbs iron. This meal might be the easiest one I’ve posted yet and you can swap out any of these ingredients for whatever mood you’re in- chicken, feta, and olives for a mediterranean feel or mozzarella and basil for a classic margherita take. Healthy, flexible, and easy- can’t beat that!


  • 1 bell pepper
  • 2 slices of deli style turkey breast or meat of choice
  • 1 tbsp tahini
  • handful of spinach
  • 1/4 avocado


  • Slice off top of pepper and take out the core
  • Slice down one side and down the parallel side to allow the pepper to fold down on itself easier. Be sure not to slice all the way through though
  • Now stuff that thing- I started with spreading the tahini on one side, then followed with the turkey, then the spinach, and the avocado in the remaining crevices
  • Press it together a bit and wrap in foil for the perfect, on-the-go, healthy lunch
