Would You Like Fries (and Broccoli) With That?

I am officially back as a real adult aka college graduate. The recipes were a little MIA due to the mess of getting sent off into the real world, but I am back in Columbia to cook with my food box and avoid the real world as long as possible. Tonight I cooked for my family for the first time in a while, so the food box came in serious handy for my side dishes. Here I present sweet potato fries (much tastier and healthier than regular fries) and the best roasted broccoli. I really like cooking with sweet potatoes instead of white potatoes because they are packed with vitamin A, have the most fiber, and are a great source of potassium. Obviously both are healthy, but if you’re looking for the bang for your buck these guys win out!

Servings: 4 people

Ingredients:
3 small sweet potatoes
2 broccoli heads
olive oil
seasonings of choice
lemon juice
minced garlic

Broccoli
-Cut off florets and place in bowl
-Drizzle with olive oil and 1 tbsp lemon juice
-Add one tbsp. of minced garlic and spread onto baking pan
-Sprinkle with pepper
-Bake for 20 minutes and flip, then place back in for 10 more minutes, or until charred to desired amount

Sweet potato fries
-Peel sweet potatoes and cut into small strips (I prefer to cut them in quarters and then cut into about half inch pieces
-Place parchment paper on an oven pan (foil and cooking spray don’t let them get as crispy)
-Place fries in a bowl and drizzle with olive oil and toss before spreading out onto paper
-Sprinkle with salt and pepper and whatever seasoning you may like ex: garlic powder, Italian seasoning, mint, cayenne pepper, even cinnamon and sugar for a sweeter play on fries!
-Bake for 20 minutes, and flip, then place back in for 20 more minutes or until crispy
