You Say Potato, I Say Apple
So I know that’s not how the saying usually goes, but it is today. You’re going to love this hash. I actually got inspired from a Blue Apron recipe that combined potatoes and apples, and it might change your life. Last night I made a big batch so I can eat it as the base for my weekend meals. And ask anyone, I do not like leftovers, so that says something about this dish. I made some crockpot lentils (to die for recipe found here: http://pinchofyum.com/quick-and-easy-lentil-quesadillas) and I’ve put them over my hash. You could throw some chili on top, mix in some wilted greens, put it on top of a salad, mix some greek yogurt in to make a potato and apple salad, or just eat it as a nice, healthy side for whatever meal you have planned!
Servings: 4-5
Ingredients:
5 red potatoes
1 fuji apple
1 tbsp. water
2 tbsp Dijon or honey mustard
Directions:
- Chop the potatoes and the apples into cubes
- Heat 1 tbsp of oil in a pan on medium high heat and add potatoes, seasoning with salt and pepper ands cooking 12-15 minutes or until browning on all sides
- Add apples and water, cooking 5 more minutes
- Stir in mustard
- Add any greens now if you want them wilted, or add them straight to the plate if you want more of a crunch
- Cook five more minutes and enjoy
