You’ve Been Chopped

Who said lettuce has to be the base of a salad? Consider finely chopping up your broccoli and adding it in a 1 to 1 ratio without your other favorite green of choice. I’m a big arugula person so I just chopped up 4 florets and the stem and made the crunchiest salad for dinner. Now you’re probably reading back through and thinking, “did she really mean to say stem?” Yes, yes I did. Whoever decided salads would be made of lettuce also probably decided to neglect the crunchy stalk that actually tastes great. This veggie is PACKED with health benefits including dietary fiber, pantothenic acid, vitamin B6, vitamin E, manganese, phosphorus, choline, vitamin B1, vitamin A (in the form of carotenoids), potassium, copper, vitamin B1, magnesium, omega-3 fatty acids, protein, zinc, calcium, iron, niacin, and selenium. I also highly recommend looking into a salad chopper. It cuts through everything and can take your salads to a whole new chopping level.
